Apple Carrot Muffins Recipe Ingredients:

 

·         1 3/4 cups raisin bran cereal

·         1 1/4 cups all-purpose flour

·         3/4 cup sugar

·         1 1/4 teaspoons baking soda

·         1 teaspoon ground cinnamon

·         1/4 teaspoon salt

·         1 egg

·         3/4 cup buttermilk

·         1/4 cup canola oil

·         3/4 cup finely chopped peeled tart apple

·         3/4 cup grated carrots

·         1/4 cup chopped walnuts

 

Recipe Directions:

 

1.       In a bowl, combine the first six ingredients.

2.       In a small bowl, beat the egg, buttermilk and oil.

3.       Stir into dry ingredients just until moistened.

4.       Fold in apple, carrots and walnuts.

5.       Fill paper-lined muffin cups or cups coated with nonstick cooking spray three-fourths full.

6.       Bake at 400 degrees F for 20-23 minutes or until a toothpick comes out clean.

7.       Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

Apple Oat Muffins Recipe Ingredients:

 

·         2 cup(s) old-fashioned or quick-cooking oats

·         1.25 cup(s) all-purpose flour

·         0.5 cup(s) packed brown sugar

·         2 teaspoon(s) baking powder

·         0.75 teaspoon(s) baking soda

·         0.75 teaspoon(s) salt

·         0.5 teaspoon(s) ground cinnamon

·         1 cup(s) buttermilk

·         2 tablespoon(s) vegetable oil

·         1 large egg, lightly beaten

·         1 cup(s) (1 to 2 medium) shredded Golden Delicious or Granny Smith apples

·         0.5 cup(s) walnuts, chopped

 

Recipe Directions:

 

1.       Preheat oven to 400 degrees F. Grease 12 standard muffin-pan cups. In large bowl, combine oats, flour, sugar, baking powder, baking soda, salt, and ground cinnamon.

2.       In medium bowl, with fork, beat buttermilk, oil, and egg until well blended; stir in shredded apples. Add apple mixture to flour mixture, and stir just until flour mixture is moistened (batter will be very thick and lumpy). Stir in chopped walnuts.

3.       Spoon batter into prepared muffin-pan cups. Bake 23 to 25 minutes or until muffins begin to brown and toothpick inserted in center of muffins comes out clean. Immediately remove muffins from pan. Serve warm, or cool on wire rack to serve later.

Banana Muffins Recipe Ingredients:

 

·         1/2 cup butter, room temperature

·         1 cup granulated sugar

·         2 large eggs

·         2 large bananas, ripe, mashed

·         1 teaspoon vanilla extract

·         2 cups all-purpose flour

·         1 teaspoon salt

·         1 teaspoon baking powder

·         1/2 teaspoon baking soda

·         1 cup sour milk or buttermilk

·         1/2 cup chopped pecans or walnuts, optional

 

Recipe Directions:

 

1.       Grease 12 muffin cups or line with paper muffin liners.

2.       Cream butter and sugar with an electric hand-held mixer until light and fluffy. Beat in eggs, one at a time, and beating after each addition. Add bananas and vanilla and beat until smooth.

3.       Mix together the flour, salt, baking powder, and baking soda. Stir flour mixture into butter mixture, alternating with the sour milk or buttermilk. Stir just until dry ingredients are moistened; gently stir in chopped nuts.

4.       Spoon banana muffin batter into prepared muffin cups or liners, filling about 2/3 full. Bake at 400° for about 15 to 18 minutes, or until tops are lightly browned. Cool banana muffins in pan on rack for a few minutes; turn banana muffins out onto rack to cool longer. Serve banana muffins warm.

Apple Raisin Cake Recipe Ingredients:

 

·         3 cups all-purpose flour

·         1 teaspoon baking soda

·         1/2 teaspoon salt

·         1 1/2 cups vegetable oil

·         3 large eggs

·         1 1/2 cups granulated sugar

·         1/2 cup packed light brown sugar

·         1 tablespoon cinnamon

·         1/2 teaspoon freshly grated nutmeg

·         1 tablespoon dark rum

·         1 teaspoon vanilla

·         3 Cortland or Empire apples, peeled and cut into 1/4-inch dice

·         1/2 cup raisins

 

Recipe Directions:

 

1.       Preheat oven to 350°F and butter and flour a 12-cup bundt pan, knocking out excess flour.

2.       Sift together flour, baking soda, and salt. Whisk together oil, eggs, sugars, spices, rum, and vanilla in a large bowl. Fold in flour mixture until just combined. Fold in apples and raisins and spoon batter into pan.

3.       Bake in middle of oven until a tester comes out clean, about 1 1/4 hours.

4.       Cool cake in pan on a rack 10 minutes, and then turn out onto rack to cool completely.

Banana Oat Muffins Recipe Ingredients:

 

·         1 1/2 cups all-purpose flour

·         1 cup rolled oats

·         1/2 cup white sugar

·         2 teaspoons baking powder

·         1 teaspoon baking soda

·         1/2 teaspoon salt

·         1 egg

·         3/4 cup milk

·         1/3 cup vegetable oil

·         1/2 teaspoon vanilla extract

·         1 cup mashed bananas

 

Recipe Directions:

 

1.       Combine flour, oats, sugar, baking powder, soda, and salt.

2.       In a large bowl, beat the egg lightly. Stir in the milk, oil, and vanilla. Add the mashed banana, and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Line a 12-cup muffin tin with paper bake cups, and divide the batter among them.

3.       Bake at 400 degrees F (205 degrees C) for 18 to 20 minutes.

Applesauce Spice Cake Recipe Ingredients:

 

·         1 1/2 cups granulated sugar

·         1 1/2 cups applesauce

·         1 cup vegetable oil

·         3 large eggs

·         2 teaspoons vanilla extract

·         2 1/4 cups all-purpose flour

·         1 teaspoon baking soda

·         1 teaspoon salt

·         3/4 teaspoon baking powder

·         1 teaspoon ground cinnamon

·         1/2 teaspoon ground nutmeg

·         1/4 teaspoon ground allspice

·         1 cup chopped dates or raisins

·         1 cup chopped walnuts or pecans

·         Sifted confectioners’ sugar or vanilla glaze

 

Recipe Directions:

 

1.       Lightly butter and flour a 12-cup bundt pan or 2 8×4-inch loaf pans.

2.       In a large mixing bowl, beat sugar, applesauce, oil, eggs, and vanilla until smooth.

3.       Stir in flour, soda, salt, baking powder, cinnamon, allspice, and nutmeg until well blended.

4.       Stir in dates or raisins and chopped walnuts or pecans.

5.       Pour batter into prepared bundt pan or loaf pans.

6.       Bake at 350° for 45 to 55 minutes, or until a wooden pick or cake tester inserted in center comes out clean.

7.       Cool cake for 10 minutes in pan on rack.

8.       Remove from pan and cool completely on rack.

Banana Upside down Cake Recipe Ingredients:

 

·         4 tablespoons butter, melted

·         1/2 cup brown sugar

·         1/2 cup chopped pecans

·         4 bananas, sliced

·         1 (18.25 ounce) package banana cake mix

 

Recipe Directions:

 

1.       Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (8 inch) pans. Combine butter and brown sugar, divide and spread evenly between the 2 pans. Sprinkle pecans evenly over both brown sugar mixtures; arrange banana slices evenly over each.

2.       Prepare cake mix according to package instructions. Divide batter into the 2 pans.

3.       Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Turn cakes upside down on a platter or plate, gently tap bottom and carefully remove pans, replacing caramel mixture that sticks to pan.

Banana Walnut Cake Recipe Ingredients:

 

·         2 1/2 cups (250g) plain flour

·         1 tablespoon bicarbonate of soda

·         1 pinch salt

·         125g unsalted butter

·         1 cup (220g) white sugar

·         3/4 cup (115g) brown sugar

·         2 eggs

·         4 ripe bananas, mashed

·         2/3 cup (170ml) buttermilk

·         1/2 cup (60g) chopped walnuts

 

Recipe Directions:

 

1.       Preheat oven to 180 degrees C. Grease and flour two 20cm round cake tins. In a small bowl, whisk together flour, bicarb soda and salt; set aside.

2.       In a large bowl, cream butter, white sugar and brown sugar until light and fluffy. Beat in eggs one at a time. Mix in the bananas. Add flour mixture alternately with the buttermilk to the creamed mixture. Stir in chopped walnuts. Pour batter into the prepared cake tins.

3.       Bake in the preheated oven for 30 minutes. Remove from oven and place on a damp tea towel to cool.

Black Forest Cake Recipe

Black Forest Cake Recipe Ingredients:

 

·         225 gms Maida (all-purpose flour)

·         400 gms Sweetened Condensed Milk

·         2-3 tbsp Cocoa Powder

·         1 tsp Baking Powder

·         1 tsp Cooking Soda

·         125 gms Butter

·         200 ml Aerated Cola Drink

·         A pinch of Salt

·         125gms Dairy Milk Chocolate

·         250 gms Fresh Whipped Cream

·         10 Cherries

 

Recipe Directions:

 

1.       Place a thick bottomed pan on very low flame and melt butter in it.

2.       Remove from the flame and let the butter cool.

3.       Add condensed milk and mix well.

4.       Sift maida, cocoa powder, baking powder, cooking soda and salt together. Make sure there are no lumps in the mixture.

5.       Grease a baking tray with little butter.

6.       Dust it with maida and keep it aside.

7.       Take a pan with little butter and put the maida mixture with the condensed milk-butter mixture.

8.       Now add aerated cola and mix it well.

9.       Pour the batter into the greased baking tray and bake for 30 to 40 minutes at 175 degrees C (350 degree f.)

10.   When it is done, let it cool and then slit it horizontally into two.

11.   Whip the cream till light and fluffy.

12.   Sandwich the two layers of cake with whipped cream and cherries.

13.   Top with whipped cream and cherries.

14.   Grate dairy milk chocolate bar and sprinkle over the cake.

15.   Serve it chilled.

6.       225ml milk

7.       110g apple – peeled, cored and chopped

·         Preheat oven to 200 C. Lightly grease a 12-cup muffin tin, or line with paper muffin cups.

·         In a large bowl, sift together the flour, baking powder and salt.

·         In a separate bowl, cream together sugar and butter. Stir the flour mixture into the sugar mixture alternately with the milk. Fold in the fruit. Pour batter into prepared muffin tin.

·         Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into the centre of a muffin comes out clean.
